Recipe: Turkey Taco Bowls

Ingredients:

  • 2 tablespoons oil
  • 1 red capsicum, sliced
  • 1 yellow capsicum, sliced
  • 1 large red onion, sliced
  • 1 tsp salt
  • 1 tsp pepper
  • 300-400g turkey mince
  • 3 tbsp homemade taco seasoning
  • 400g can crushed tomatoes
  • 2 cups cooked rice
  • 1 can black beans, rinsed
  • 1 can corn
  • 1 jar salsa
  • 1 lime, sliced into wedges
  • Cheddar cheese, grated
  • Fresh coriander, for garnish

Method:

  1. Heat oil in pan and add capsicums, onion, pepper and salt cooking until vegetables soften. Remove from pan and set aside.
  2. Add turkey mince to hot pan breaking up any lumps. Add taco seasoning and stir until meat is browned.
  3. Stir in tomatoes and simmer for about 5 mins then remove from heat.
  4. Assemble four bowls and add a base of rice to each then top with a scoop of black beans, corn, salsa, cheese, capsicum and onion mixture and cooked turkey mince. Garnish with coriander and lime wedges.
