{"id":2305,"date":"2019-02-04T13:15:16","date_gmt":"2019-02-04T02:15:16","guid":{"rendered":"https:\/\/theyarn.freerangebutcher.com.au\/?p=2305"},"modified":"2023-09-04T13:35:30","modified_gmt":"2023-09-04T03:35:30","slug":"mexican-lamb-mince","status":"publish","type":"post","link":"https:\/\/theyarn.freerangebutcher.com.au\/mexican-lamb-mince\/","title":{"rendered":"Mexican Lamb Mince"},"content":{"rendered":"<p>This Mexican style lamb mince is a delicious and an easy mid-week meal.\u00a0 The kids love it and it works well as leftovers the next day.<\/p>\n<h3>Ingredients:<\/h3>\n<ul>\n<li>500g <a href=\"https:\/\/www.freerangebutcher.com.au\/pasture-fed-lamb\/\">Pasture Fed Lamb Mince<\/a><\/li>\n<li>3 rashers <a href=\"https:\/\/www.freerangebutcher.com.au\/smokehouse\/\">Free Range Low Nitrate Bacon, diced<\/a><\/li>\n<li>1 onion, diced<\/li>\n<li>1 large zucchini, thinly sliced<\/li>\n<li>1 tsp black pepper<\/li>\n<li>3 cloves garlic, crushed<\/li>\n<li>1 Tbsp turmeric<\/li>\n<li>1 tsp smoked paprika<\/li>\n<li>1 tsp ground cumin<\/li>\n<li>Sea salt to taste<\/li>\n<li>3 cups spinach, kale or rocket<\/li>\n<li>1 tsp Tamari<\/li>\n<li>1 Tbsp coconut oil or butter for cooking<\/li>\n<\/ul>\n<h3>Method:<\/h3>\n<ul>\n<li>Heat a large cast iron pan on medium to high heat and add coconut oil.\u00a0 Place onions into pan and fry for 2 mins and then add bacon.\u00a0 Keep frying your onion and bacon for approximately 4 minutes until the bacon starts to crisp up.\u00a0 Add your zucchini slices into the pan and fry on both sides until nice and brown.<\/li>\n<li>Scoop out the onions, bacon and zucchini to a bowl and leave the bacon fat in the pan.<\/li>\n<li>Now add your lamb mince and garlic and cook until the lamb mince is brown all over.\u00a0 Break up any chunks of meat with your spatula.<\/li>\n<li>Add the spices, salt and pepper and stir through.\u00a0 Return the cooked onions, bacon and zucchini to the pan and mix through.<\/li>\n<li>Throw in your greens and the Tamari and turn off the heat and mix until greens are wilted.<\/li>\n<li>Serve your Mexican Lamb Mince in a bowl, with a side salad, topped with avocado, in lettuce cups or with some sweet potato chips.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This Mexican style lamb mince is a delicious and an easy mid-week meal.\u00a0 The kids love it and it works well as leftovers the next day.
