Satay Chicken Noodles

(Serves 5-6) Enjoy every bite of this wholesome, flavourful treat!

Ingredients:

Marinade

  • 1kg chicken thigh fillets, cut into cubes
  • 4 tbsp salt reduced soy sauce
  • 3 tbsp sriracha sauce
  • Juice of half a lime
  • 3 cloves garlic, finely chopped
  • 2 tbsp chilli flakes
  • 2 tbsp garlic powder
Satay Sauce
  • 1 cup of crunchy peanut butter
  • 4 tbsp salt reduced soy sauce
  • 2 tbsp sriracha sauce
  • 4 tbsp honey
  • Juice of half a lime
  • ½-1 cup of water
Stir-Fry
  • 1 tbsp oil of choice
  •  3 carrots, chopped
  • 1 zucchini, chopped
  • 3 mushrooms, chopped
  • 1 handful snow peas
  • 2 bunches pak choy, chopped
  • 500g egg noodles
  • 2 tbsp sesame seeds

 Method:

  1. Marinate the chicken in the listed ingredients for 10-30 minutes.
  2. Heat a pan on high and cook the chicken for 7-10 minutes until golden, then set aside.
  3. In the same pan, mix together all the satay sauce ingredients. Add the cooked chicken and vegetables, stirring to coat them in the sauce.
  4. Cook noodles according to the package instructions, drain, and toss them into the pan with the chicken and sauce. Serve topped with sesame seeds and enjoy your flavourful satay noodles!
TIP: For the best flavour in your satay chicken noodles, marinate the chicken for at least 30 minutes (or longer if possible). This allows the spices and flavours to fully absorb into the meat, making it more tender and delicious. Also, cook the chicken on high heat to get a nice sear, which adds extra depth to the dish.
