Looking to add a fiery twist to your weeknight pasta routine? This Chorizo, Chilli & Kale Pasta recipe is a delicious way to mix up classic flavours with a kick of spice and a boost of greens. With smokey chorizo, vibrant kale, and a tomato base that brings it all together, this dish is hearty, healthy, and ready in under 30 minutes. Perfect for feeding a crowd or prepping for a few days’ worth of meals, it’s a standout recipe that keeps things simple while packing in bold flavour (Serves: 5-6).
Ingredient
- 200g chorizo, cut into small pieces
- 2 tbsp olive oil
- 2 cloves garlic, minced
- ½ onion, diced
- 1 tbsp Bippi’s chili or dried chilli flakes
- 5 small mushrooms, sliced
- 1 capsicum, sliced
- 1 cup kale, shredded
- 800g tinned tomatoes
- 1 tbsp tomato paste
- 1 pinch salt
- 1 pinch pepper
- 500g pasta
- ½ cup of pasta water
Method:
- Heat saucepan over a medium heat, add olive oil, garlic, chill & onion and cook until browned.
- Add chorizo to the pan and fry until browned.
- Add chopped mushroom, capsicum, tinned tomatoes, tomato paste, salt and pepper to the pan and cook for 10 minutes.
- Boil pasta as per packet instructions, then add the pasta, pasta water and kale to the pan, combining well and cook for another 2-3 minutes.
- Serve with your choice of cheese and fresh herbs.
TIP For a rich and creamy finish, add a splash of heavy cream or a dollop of ricotta to the sauce just before serving. This balances the heat from the chili and complements the chorizo’s smokiness perfectly!
