This Bacon & Egg McMuffin is the perfect weekend breakfast option. It is so simple to make, and the addition of the Devilled Egg Mayo takes it to the next level. Combining bacon and eggs gives it a mighty 30g of protein and 6g of fibre. This is easily made any day of the week with a handful ingredients you probably already have at home.
Ingredients:
- 2 wholemeal English muffins
- 2-4 eggs
- 2 rashers of smokey bacon
- 4 slices of tomato
- 1 handful of spinach
- 2 slices of aged cheddar cheese
- Salt & pepper
Devilled Egg Sauce
- 2 tbsp light mayo
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
- ½ tsp paprika
- 1-2 tsp tabasco sauce
- Salt & pepper
Method:
1. Combine all sauce ingredients.
2. Cook bacon & eggs in a fry pan until desired.
3. Assemble ingredients onto the English muffin – sauce, tomato, cheese, bacon, egg, spinach, salt & pepper.
4. Enjoy!
