Beef Miso & Honey Stir Fry

This Beef Miso and Honey Stir-Fry is a delicious balance of savoury, sweet, and umami flavours. Tender beef strips are quickly cooked with vibrant vegetables, then tossed in a rich sauce made with miso paste, honey, soy, and garlic. It’s a quick and nourishing weeknight meal that pairs perfectly with steamed rice or noodles (serves 2). 

Ingredients:

  • 280-300g rump steak, sliced 
  • 2 tsp sesame seed oil 
Sauce 
  • 2 tbsp miso paste 
  • 2 tbsp reduced sodium soy sauce 
  • 1 tbsp honey 
  • 2 garlic cloves, minced 
  • Thumb size piece of ginger, minced 
  • Pepper & salt 
  • 1 tbsp cornstarch 
  • 4 cups of veggies of choice (I used mushrooms, carrots, capsicum, pak choy, zucchini), sliced 
To serve 
  • 150g jasmine rice 
  • 2 tsp sesame seeds 

Method:

  1. The trick to cooking a stir fry is to make sure all your ingredients are ready to go before you start cooking.  So, make sure you prepare your steak and vegetables and get your stir-fry sauce ready by combining miso, soy sauce, honey and cornstarch.
  2. Cook the Beef: Heat a wok or large pan over medium-high heat. Add sesame oil, then the beef strips in a single layer. Stir-fry for 2–3 minutes until browned on the outside. Remove from the pan and set aside. 
  3. Cook the Aromatics and Vegetables: Add a little more oil to the pan. Sauté garlic and ginger for 1–2 minutes until fragrant. Add vegetables and stir-fry for 3–4 minutes until just tender. Return the steak to the pan, add the stir-fry sauce, and cook for another 2–3 minutes until the sauce thickens and the beef is cooked through. 
  4. Cook Rice & Serve: Prepare rice as per packet instructions. Serve with the beef and veggie stir-fry, and top with sesame seeds. 
Tip: For extra tender beef, slice it thinly against the grain and let it marinate in a little soy sauce and cornflour for 10–15 minutes before cooking—this helps lock in moisture and improve texture.
