Creamy Pesto Chicken Pasta

Creamy, flavourful and packed with goodness, this Creamy Pesto Chicken Pasta is the perfect meal to satisfy your cravings without compromising on nutrition. Bursting with the herby freshness of homemade pesto, tender chicken, and a luscious creamy sauce, this dish is ideal for a family dinner or meal prep for the week. Best of all, it’s quick to make, so you can enjoy a wholesome, restaurant-quality meal without spending hours in the kitchen (Serves: 6).

Ingredients:

  • 1kg chicken thighs, diced
  • 1 tbsp olive oil
  • 500g pasta of choice
  • 1.5 cups of low fat cooking cream/Greek yoghurt
Pesto
  • 5 cloves garlic
  • 2 bunches of basil
  • 250g spinach
  • 1/3 cup olive oil
  • 4 tbsp pine nuts, toasted
  • 1 cup cashews, toasted
  • ½ lemon juice
  • 2 tbsp, parmesan cheese
  • 1 pinch salt & pepper
  • ½ cup pasta water

Method:

  1. Pesto: Place all ingredients into a blender/food processor/or use a stick blender and combine until all ingredients have formed into a sauce.
  2. Heat a saucepan on a medium heat, add olive oil and chicken for 5-7 minutes or until browned.
  3. Cook pasta as per packet instructions. Drain pasta, keeping ½ cup of pasta water for the sauce.
  4. In a saucepan/large pot, combine the pasta, chicken, pasta water, pesto and cream. Stir until sauce coats the pasta.
  5. Serve with more parmesan cheese, pesto or even cherry tomatoes.
TIP: To make your pesto extra vibrant and flavourful, toast the nuts beforehand. Toasting enhances their natural oils and brings out a deeper, nuttier taste that elevates the entire dish. If you’re using Greek yogurt instead of cream, mix it into the dish off the heat to prevent curdling.
