Gochujang Beef

Gochujang Beef is a hearty and flavourful dish that brings together the rich, umami taste of gochujang (Korean chili paste) with tender beef mince and earthy mushrooms. This recipe offers a balanced mix of heat, savoriness, and freshness, perfect for a quick weeknight meal or a special gathering. Served alongside steamed rice and pak choy, this Gochujang Beef is a satisfying meal that delivers bold flavours with minimal effort (Serves: 6). 

Ingredients: 

  • 1kg beef mince 
  • 3 cloves garlic, finely chopped 
  • 2 tbsp olive oil 
  • 1 brown onion, diced 
  • 219g Swiss brown mushrooms, finely diced 
  • 3 spring onions, finely chopped 
  • 3 tbsp gochujang chilli paste 
  • 2 tbsp soy sauce 
  • 1 tsp chilli flakes 
  • 1 pinch salt & pepper 
To Serve 
  • 600g white rice 
  • 2 bunches of pak/bok choy 
  • 2 fresh chilli’s, finely chopped  

Method: 

  1. Heat a saucepan on a medium heat, add onion, garlic and spring onions and fry until translucent. Add in beef mince and cook for 5-7 minutes or until minced is browned. 
  2. Add in gochujang chilli paste, soy sauce, mushrooms, chilli flakes, salt and pepper. Stir ingredients together and cook for another 4-5 minutes, or until mushrooms are soft. 
  3. Serve with white rice, steamed pak choy and garnish with finely chopped chilli. 
TIP: For extra depth of flavour, marinate the beef mince in the gochujang and soy sauce for 30 minutes before cooking. This helps the beef absorb the spices, resulting in a more intense and delicious taste!
