Pork, Fennel & Cranberry Sausage Rolls

Craving a savory snack that’s bursting with bold flavours? These Pork, Fennel & Cranberry Sausage Rolls offer a delicious twist on the classic. The combination of rich pork, aromatic fennel, and a touch of cranberry sauce creates a perfect balance of savory and sweet. Ideal for any occasion, these sausage rolls are easy to make and even easier to enjoy (makes 5 large sausage rolls/serves 6-8 people) 

Ingredients 

  • 500g pork mince 
  • ¼ cup breadcrumbs 
  • 2 eggs 
  • 5 sheets of puff pastry 
  • 1 onion, diced 
  • ½ cup fennel, diced 
  • 2 garlic cloves, minced 
  • 1 pinch salt & pepper 
  • ½ cup cranberry sauce 
  • 1 tbsp thyme 
  • ¼ cup sesame seeds & poppy seeds 

Method 

  1. Preheat oven to 180°C and line baking trays with baking paper. 
  2. In a mixing bowl combine pork mince, 1 egg, breadcrumbs, onion, garlic, fennel, thyme, salt and pepper until all ingredients are well combined. 
  3. Thaw pastry for a few minutes and place 2-3 tablespoons of mince mixture along the edge of the pastry. Place 1 tablespoon of cranberry sauce along one edge. Place egg-wash on both sides and sausage roll until there isn’t any more pastry. Place fork indents onto the pastry, cover with egg wash and sprinkle with sesame seeds and poppy seeds. 
  4. Bake for 30 minutes or until golden brown. 
TIP: For perfectly crisp and flaky sausage rolls, ensure your pastry is just thawed but still chilled before rolling. Overly soft pastry can become difficult to handle and may not puff up as desired.
