Slow Cooker Beef & Vegetables

Slow Cooker Beef and Vegetables is the perfect hearty and flavourful meal, which is perfect for winter. The slow cooking process ensures the beef is melt-in-your mouth tender and falls apart on your fork – yum!  Ideal for a cozy family dinner, this quick and easy slow cooker beef dish will have you making this savory meal over and over again. To save time, don’t bother cutting your chuck steak or gravy beef.  Simply brown the pieces and add to the slow cooker.  The slow cooking process will ensures the meat will easily shred once the cooking process is done. (Serves 4)

Ingredients: 

  • 500g chuck steak or gravy beef, cut into strips
  • 1 tbsp olive oil 
  • 1 brown onion, diced 
  • 3 cloves of garlic, minced 
  • 1 cup salt-reduced beef stock 
  • 1 cup water 
  • ½ cup low-sodium soy sauce 
  • 1 tbsp sesame oil 
  • 2 tbsp brown sugar 
  • 4 tbsp dissolved in 4 tbsp of water 
  • 3 carrots, sliced 
  • 2 bunches of broccolini, cut into 4 pieces 
  • 5 mushrooms, sliced  
  • 200g rice noodles to serve

 Method: 

  1. Cut beef into strips, heat saucepan and add 1 tbsp olive oil and cook onion, garlic and beef over a high heat.  Cook for 5 minutes or until beef is browned and onions are translucent. Remove from the saucepan and add to a slow cooker. 
  2. To the slow cooker add stock, water, soy sauce, sesame oil and sugar and stir until combined.  Cook in the slow cooker on the low setting for a minimum of 4-8hours.  
  3. Whisk together cornstarch and water in a separate bowl.  Add vegetables and corn starch mixture to the slow cooker and gently stir to combine. 
  4. Cover and cook for 30 minutes until sauce thickens and vegetables are slightly soft. 
  5. Serve with rice noodles (cooked as per cooking instructions) and enjoy! 
 TIP: The longer you slow-cook the beef, the more tender and juicy it will become. This delicious meal can also be served with crusty bread, mashed potatoes, or over rice.
