Ingredients:

Salad
  • 2 tbsp olive oil
  • 300g sirloin steak
  • Salt & pepper
  • 3 cups of salad leaves
  • 15 cherry tomatoes, halved
  • ½ red onion, sliced
  • 1 Lebanese cucumber, sliced
  • ¼ cup mint and coriander leaves
Dressing
  • ½ chilli
  • 1 tsp garlic, minced
  • ½ tsp white sugar
  • 2 tbsp fish sauce
  • 4 tbsp lime juice
  • 1 tbsp olive oil
  • Salt
To Serve
  • ¼ cup peanuts
  • Mint, coriander & chilli
Method:
  1. Heat 1 tablespoon of olive oil in a pan over medium-high heat. Season the sirloin steak with salt and pepper. Cook the steak for about 3-4 minutes on each side (depending on thickness) until cooked to your liking. Remove from heat and rest for 5 minutes, then slice thinly.
  2. In a large bowl, combine the salad leaves, halved cherry tomatoes, sliced red onion, sliced cucumber, and mint and coriander leaves.
  3. To make the dressing, finely chop the chilli and mix it with minced garlic, white sugar, fish sauce, lime juice, olive oil, and a pinch of salt in a small bowl. Stir until sugar dissolves and ingredients are well combined.
  4. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  5. Divide the salad between two plates, top with sliced steak, sprinkle with peanuts, and garnish with extra mint, coriander, and chilli if desired. Serve immediately.
Tip: For extra flavor, marinate the sirloin steak in a little of the dressing for 15–20 minutes before cooking. Also, allow the steak to rest after cooking, this helps keep the meat juicy and tender when sliced.
