This Udon Beef Stir-fry is a quick, flavour-packed dish that brings together tender beef, hearty noodles, and a mix of colourful vegetables in a rich, savoury sauce. Perfect for busy weeknights, it’s satisfying, balanced, and comes together in under 30 minutes.Serves 2
Cook udon noodles according to packet instructions. Drain and set aside.
Heat 1 tbsp olive oil in a large pan or wok over medium-high heat. Slice beef thinly and sear until browned. Remove and set aside. Add remaining oil, onion, and garlic. Stir-fry until fragrant.
Add carrots, zucchini, capsicum, and mushrooms (including soaked shiitake). Cook until slightly tender. Return beef to the pan, add udon noodles, and pour in hoisin and soy sauce. Toss everything together until heated through.
Sprinkle with sesame seeds before serving.
Tip: For the most tender beef, slice the sirloin thinly against the grain and sear quickly on high heat to lock in flavour.
