These are the ultimate mid-week Taco night dinner because you don’t even have to brown off the meat. The family will love the taste, and the head cook will love how easy these are to make. Definately get the kids involved with cooking these. They’ll be happy to squish the beef mince onto the tortillas.

Ingredients:
- 1kg Premium Beef Mince
- 20 mini taco breads
- 6 tbsp taco spice mix
- 400g refried beans
- jar salsa
- grated cheese
- avocado
- fresh lime
- fresh coriander
Method:
- Pre-heat oven to 190 degrees
- Grab your largest flat baking tray and spray with a little oil
- Lay out your mini taco breads
- To ensure you get even amounts of beef mince per taco, use an ice-cream scoop to scoop up your mince
- Squish your ball of mince onto one side of your taco bread
- Sprinkle the mince with taco seasoning
- Spread a tablespoon amount of refried beans on top of the seasoned mince
- Add a dollop of salsa
- Top with lots of cheese – just use a mix of whatever you have in the fridge
- Fold taco bread in half and lightly spray with oil
- Cook for 10 mins on each side until crispy
- Whilst your tacos are cooking make your avocado salsa by combining mashed avo, lime juice and chopped coriander
- Serve with your avocado salsa and mini corn cobs
