Spanish Marinade

Spanish Marinade for Lamb

Try this delicious marinade with lamb chops, steaks or on a butterflied leg of lamb this week.  It was a beautiful rich, red colour and the paprika provided just a hint of smokiness.  The cayenne pepper is optional but I think it definately needs it and it’s only a teaspoon so won’t be too hot.

Ingredients:

  • 2 tbsp sweet smoked paprika
  • 1 tsp cayenne
  • 1 tsp salt
  • 1/2 cup olive oil
  • 1 tsp cumin
  • 2 cloves garlic, minced
  • 1 tsp Italian herbs
  • 1 tbsp red wine vinegar

Method:

  • Mix all ingredients together
  • Place lamb into a glass dish
  • Pour over marinade
  • Cover and place in fridge for 3-4 hours
