Salsa

The perfect summer salsa to accompany your favourite protein.  BBQ some steaks, grill some pork mediallions or bake some chicken breast.   This salsa will be delightfully, fresh and crunchy whatever you decide to pair it with.

Ingredients:

  • 250g blueberries
  • 1/2 pineapple, chopped into bite size pieces
  • 1 small red onion, diced
  • 1/2 bunch mint, chopped
  • 1/2 bunch coriander, chopped
  • 1 – 2 limes, juiced

Method:

  1. Prepare all your ingredients.
  2. Combine all ingredients except lime and stir well.
  3. Squeeze lime juice over salsa and gently mix.
  4. Cook your favourite protein and serve with salsa.  We chose pork medallions and loved it.  This would go just as well with a steak, butterflied leg of lamb or even grilled chicken breast.
