Pork Sausage Tray Bake

Pork Chipolatas are a classic mini sausage that are so versatile.  We love them at Christmas as Pigs in Blankets, they are great as a breakfast sausage and little kids love them in their lunchbox.  The best bit is how delicious they are in this one tray bake.

Ingredients:

  • 600g Pork Chipolatas or Preservative Free Beef Sausages
  • 2 decent sized potatoes, diced
  • 1 carrot, cut into chunks
  • 1 zucchini, cut into chunks
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp marmalade
  • salt and pepper, to season

Method:

  • Pre-heat oven to 200 degrees and grab a large oven proof casserole dish
  • Chop all vegetables and place in casserole dish
  • Sprinkle olive oil and balsamic vinegar and stir to coat the vegies
  • Roast for about 20 minutes
  • Remove tray from oven and give vegies a good stir.  Add in pork sausages and cook for another 20 minutes.
  • Remove from oven and stir through marmalade.  Give everything a good stir and return to oven for 10 minutes until sausages are cooked through.
  • You can stir through some chopped fresh parsley if you like before serving.
  • Place a big scoop onto your dinner plates and enjoy.
I used a blood orange and ginger marmalade the first time so it had a bit of a kick rather than sweet.  Use whatever marmalade you have in the fridge.
