Recipe: Apple Glazed Turkey Meatballs

Ingredients:

  • 450g organic free range turkey mince
  • 3 cloves garlic, crushed
  • 30g apple sauce
  • 4 shallots, sliced
  • 1/3 cup almond flour
  • 1/3 cup grated apple
  • 1/2 tsp Cayenne Pepper
  • 1 tsp salt
  • 2 tsps Cinnamon

For the sauce:

  • 1 cup apple juice
  • 1/2 cup Coconut Aminos (or you could try Tamari or Soy Sauce)
  • 1 tsp ginger, freshly grated
  • 30g apple sauce
  • 1 1/2 tbsp Arrowroot (can use cornflower)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp nutmeg

Method:

  • To make meatballs, combine all ingredients in a large bowl and mix well.
  • Form into small meatballs and place on a tray lined with baking paper.
  • Bake at 200c for 20 minutes.  You may like to turn the half way through.
  • Whilst the meatballs are cooking, combine the sauce ingredients in a saucepan and whisk together.
  • Bring to a gentle boil and then lower the heat and simmer for 10 minutes or until sauce thickens.
  • Once meatballs are cooked, remove from over and place in saucepan and coat with sauce.
  • Serve with steamed greens like broccoli or roasted asparagus sprinkled with sesame seeds.
