Recipe: Mini Turkey Meatloaf

This recipe is provided courtesy of GreenAg Organic Free Range Turkey.

Ingredients:

  • 600g turkey mince
  • ¾ cup oats or quinoa flakes
  • ½ tsp ground cumin
  • ½ tsp dried thyme
  • Pinch cayenne pepper
  • 1 tsp salt
  • ½ tbsp. garlic powder
  • 1 small onion, finely chopped
  • 1 ½ celery stalks, finely chopped
  • ½ zucchini, grated
  • ½ carrot, grated
  • 1 egg, lightly whisked

Method:

  1. Pre-heat oven to 200 degrees.
  2. Grease muffin tins.
  3. Add all ingredients to bowl and mix well. Portion into muffin tins.
  4. Bake for 40 minutes and serve with mash and greens.
