Salsa with Blueberries & Pineapple

Is it a salad or a salsa?  This dish is perfect alongside your favourite protein.  Whether you cook a steak, bake some chicken or grill some pork steaks, this is a great accompaniment to your summer dinners.

Ingredients:

  • 250g blueberries
  • 1/2 pineapple, chopped into bite size pieces
  • 1 small red onion, diced
  • 1/2 bunch mint, chopped
  • 1/2 bunch coriander, chopped
  • 1 – 2 limes, juiced

Method:

  1. Prepare all your ingredients.
  2. Combine all ingredients except lime and stir well.
  3. Squeeze lime juice over salsa and gently mix.
  4. Cook your favourite protein and serve with salsa.  We chose pork medallions and loved it.  This would go just as well with a steak, butterflied leg of lamb or even grilled chicken breast.
