Tequila Marinated Chicken

Just like a Margaritta but dinner instead! This dish was inspired by the bottle of tequila my Mum got for me duty free a couple of weeks ago.  The lime juice, tequila and pineapple juice make this a quick marinade and we’ve stepped it up a notch in flavour with some garlic and chilli.  I prefer to roast in the oven but this can be easily done on the BBQ for a summer of butterflied chicken and cocktails.

Ingredients:

  • Plain Butterflied Chicken
  • 60ml Tequila
  • 125ml Pineapple juice
  • 2 tbsp fresh lime juice
  • 1 tsp garlic powder
  • 1/2 tsp chilli powder
  • 2 tbsp olive oil

Method:

  • Combine all marinade ingredients in a large glass dish.
  • Place your butterflied chicken into the dish and turn to coat on all sides.
  • Leave to marinated for 1 to 3 hours.  Don’t let it marinated too much longer due to the ‘acids’ in this marinade.
  • Pre-heat oven to 180 degrees.
  • Gently lift your chicken out of the dish and allow the excess marinade to drain back into the dish.  Reserve the marinade.
  • Place your butterflied chicken into a roasting dish and roast for 15 mins.
  • Baste with reserved marinade and cook for a further 30 mins.
  • Allow your chicken to rest for 5 mins before slicing into pieces and serving.  If cooking this in Summer, we recommend serving with a crispy green salad.  If its Winter then make sure to roast a tray of vegies whilst the chicken is cooking.  Our favourites are beetroot, pumpkin and zucchini.
