Recipe: Broccoli Salad

Ingredients

  • Extra large floret of broccoli (approx 8 cups)
  • small red onion, finely chopped
  • 300g Pasture Fed Free Range Bacon
  • 1/2 cup craisins (cranberries) or raisins
  • 1/2 cup sunflower seeds

     Dressing

  • 1 cup mayo or sour cream or kefir yoghurt
  • 2 tbsp red wine vinegar
  • 3 tbsp honey
  • salt and pepper to taste

Method

  • Place salad ingredients in large bowl.
  • Place dressing ingredients in a jar and mix thoroughly.
  • When ready to serve add dressing to salad and mix well.
  • Salad and dressing can be made day before and kept separately in the fridge until ready to serve.

Michele Lyons spent 25 years working in the corporate environment with 10 years as an Executive Assistant at a senior level. A couple of years ago Michele decided to forgo the long hours in the city to work closer to home and spend more time with her two teenage boys.
