Ingredients:
- 2 tablespoons oil
- 1 red capsicum, sliced
- 1 yellow capsicum, sliced
- 1 large red onion, sliced
- 1 tsp salt
- 1 tsp pepper
- 300-400g turkey mince
- 3 tbsp homemade taco seasoning
- 400g can crushed tomatoes
- 2 cups cooked rice
- 1 can black beans, rinsed
- 1 can corn
- 1 jar salsa
- 1 lime, sliced into wedges
- Cheddar cheese, grated
- Fresh coriander, for garnish
Method:
- Heat oil in pan and add capsicums, onion, pepper and salt cooking until vegetables soften. Remove from pan and set aside.
- Add turkey mince to hot pan breaking up any lumps. Add taco seasoning and stir until meat is browned.
- Stir in tomatoes and simmer for about 5 mins then remove from heat.
- Assemble four bowls and add a base of rice to each then top with a scoop of black beans, corn, salsa, cheese, capsicum and onion mixture and cooked turkey mince. Garnish with coriander and lime wedges.
